Green Tomato Chutney

Contributed by Lanesville CSA Member

"The perfect solution for all those unripe tomatoes in your September garden. A nice addition to any meat or poultry meal, serve on the side and tantalize your tastebuds!"

Ingredients:
2 seeded and chopped lemons
2 skinned and chopped garlic cloves
10 cups chopped green tomatoes
4 1/2 cups brown sugar
3 cups seeded raisins
1 1/2 cups grated fresh ginger root (I use 2 cups)
3 tsp cayenne
4 cups cider vinegar
4 chopped red peppers, seeds and membranes removed

Directions:
After seeding, chopping and grating the above, combine all the ingredients in a large pot and bring to a simmer. Continue to simmer for about 15 minutes or until the fruit becomes tender.

Put the chutney in pint sterile jars and seal. Makes about 3 quarts
