Balsamic-Glazed Chicken Breasts

1 tbsp. olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1lb boneless chicken breasts
1/4 cup Balsamic Vinegar
1 cup chicken broth
2 tbsp honey
1 tbsp butter
Salt and freshly ground black pepper to taste

Heat olive oil in a large frying pan over medium heat. Add chopped onion and garlic. cook until soft. Pound chicken breasts to 1/4 inch thick. Add chicken breasts to skillet, season with salt and pepper. Cook until browned (cooking time depends on thickness of breasts). Turn, season other side, cook until browned. Remove to a plate and cover with foil to keep warm. Add balsamic vinegar, chicken broth and honey to skillet. Turn heat high, bring to a boil. Then turn heat down to medium-low, simmer until liquid is reduced by half. Stir in butter. When melted, add chicken breasts to skillet, heat until warmed. Serve immediately.
