from our 2009 CSA Potluck Dinner
2 red peppers, chopped
1 small red onion, chopped
1 can black beans, 14 or 15 oz, strained and rinsed
3/4 cup fresh chopped cilantro
3 ears corn (boil for 5 minutes)
Dressing:
1 tbsp fresh lime juice
3 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp dijon mustard
Cut kernels off of corn cobs, mix together with peppers, onion, cilantro, and black beans. Mix dressing ingredients together and pour over the black bean mixture. Mix well and chill.
