Serves 2 - adapted from thegarlicstore.com
This soup enhances the delicate garlic-asparagus flavor of the scapes. If you don't have quite enough scapes, try adding green onions or even asparagus.
1 1/2 cups garlic scapes, cut into 2-inch pieces
1/2 medium onion, chopped
1 1/2 teaspoons olive oil
1/2 teaspoon fresh thyme leaves
1 1/2 cups chicken broth
1/2 cup cream
Salt and pepper to taste
Sauté garlic scapes and onion in the olive oil until soft
Add thyme
Pureé vegetables in blender or food processor,
Add chicken stock as needed to make smooth paste
Return to pan
Add remaining chicken broth
Bring to simmer then add cream
Adjust seasoning to taste
