CSA Vegetable Soup

Ingredients:
1 large onion
1 cup chopped celery
1 ½ cups shell beans
2 cups yellow or green beans, chopped
2 cups broccoli, chopped
1 cup rice
1 ½ cups summer squash and/or zucchini
3 large ears of fresh corn, cut from cob
2 leaves sage
1 tsp dried basil
6 cups chicken or vegetable broth
2 cups water
14 oz. canned diced tomatoes
2 Tbsp. olive oil

Preparation:
Sautee onion and celery on medium heat until soft. Add broth and bring to a boil. Add vegetables, rice, tomatoes, sage and basil, and simmer for 5 minutes. Add water to desired consistency and simmer 20 minutes on low heat. Add salt and pepper to taste.

  1. I have had this soup and its wonderful!!! I actually didn't add any broth, I let the soup cook for about an hour and it had tons of flavor! Thanks for sharing, I've added your site to my blog so my views can see, this is a great resource for healthy eating :)
